Rani's OG Fried Chicken

Love fried chicken? Here’s a family recipe that our friend’s mother was kind enough to share with us. It’s absolutely delicious and we hope you enjoy it as much as we do!

Ingredients:

  • 1 whole chicken (wings, chicken breasts, legs and thighs separated)
  • 5 cloves of garlic and 1” piece of ginger (make into paste or use 3 tbsp of ginger garlic paste)
  • 3 tbsp OG Tamil Meat Seasoning divided into 3 parts
  • 1 tsp coriander powder
  • 1 tbsp canola, sunflower or olive oil
  • ½ cup of corn starch or potato starch (for dusting)
  • 2 cups all purpose flour
  • Lime or lemon wedges (for finishing)
  • Curry leaves
  • 2-3 hot pepper of your choice

Method

  • Separate chicken into large pieces for frying
  • Blend garlic and ginger into a paste
  • Mix chicken with ginger garlic paste, 1 tbsp of oil, 1 tbsp of OG Tamil Meat Seasoning and coriander powder. Marinate for at least 4 hours or overnight (so flavours can soak in)
  • Prepare a dredging station by mixing corn starch, all purpose flour and 1 tbsp of OG Tamil Meat Seasoning in a large bowl or wide tray
    • Dredge the chicken and coat it thoroughly in the dry mix and set aside on a tray
  • Heat a deep fryer or heavy bottom pot with canola, sunflower or vegetable oil (use lard if you’re feeling a little indulgent!) to 350˚F
  • Take the coated pieces of chicken and place into the oil 1 piece at a time; be sure not to overcrowd the deep fryer or pot to ensure even cooking. Fry for 12 to 15 mins until chicken is fully cooked (to be sure that chicken has fully cooked, use a meat thermometer on the thickest part of the meat, which should be away from the bone and confirm that temperature is at 165˚F)
  • Place cooked chicken in a bowl lined with paper towel to absorb excess grease and season with the remaining OG Tamil Meat Seasoning (you may use more or less based on preference)
  • Deep fry hot peppers for 1 to 2 minutes and place on paper towel
  • Deep fry the curry leaves about 15 to 20 seconds and also place on paper towel
  • Serve the fried chicken on a plate garnished with the deep fried peppers, curry leaves over it and lemon/lime wedges on the side
